Broccoli Cheddar Soup

Broccoli Cheddar Soup is one of those feel-good, cozy classics I never tire of. It’s rich, creamy, and packed with cheesy goodness—but it still gives you that satisfying “I ate my veggies” vibe. Whether it’s a chilly day or I’m just craving a bowl of something comforting, this soup always hits the spot. It’s easy to make, super customizable, and even better with a chunk of crusty bread (or served in a bread bowl if you’re going all in). Honestly, it’s comfort food at its finest.

🥦🧀 Broccoli Cheddar Soup

Ingredients

  • 2 tbsp butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups whole milk (or half-and-half for extra creaminess)
  • 2 cups low-sodium vegetable or chicken broth
  • 3 cups broccoli florets, chopped small
  • 1 cup shredded carrots (optional but classic)
  • Salt and pepper to taste
  • 1/2 tsp paprika or a pinch of nutmeg (optional, but adds depth)
  • 2 cups sharp cheddar cheese, shredded
  • Optional: a bit of grated parmesan or a sprinkle of crushed red pepper

Instructions

  1. Sauté the Base:
    • In a large pot, melt the butter over medium heat.
    • Add the onion and cook until soft, about 4–5 minutes.
    • Stir in the garlic and cook for another 30 seconds.
  2. Make a Roux:
    • Sprinkle in the flour and stir constantly for about 1–2 minutes to cook out the raw flour taste.
  3. Add Milk & Broth:
    • Slowly whisk in the milk, then the broth. Keep whisking until it’s smooth and begins to thicken—about 4–6 minutes.
  4. Add the Veggies:
    • Toss in the broccoli and carrots. Season with salt, pepper, and optional paprika or nutmeg.
    • Simmer gently (don’t boil!) for about 15–20 minutes, until the broccoli is tender.
  5. Cheesy Finish:
    • Reduce heat to low. Stir in the shredded cheddar a little at a time until melted and smooth.
    • If you want it extra creamy, blend part (or all) of the soup with an immersion blender—or keep it chunky!
  6. Taste & Serve:
    • Adjust seasoning if needed, and serve hot. Great with crusty bread, in a bread bowl, or topped with extra cheese.
