Ingredients
- 2 tbsp butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups whole milk (or half-and-half for extra creaminess)
- 2 cups low-sodium vegetable or chicken broth
- 3 cups broccoli florets, chopped small
- 1 cup shredded carrots (optional but classic)
- Salt and pepper to taste
- 1/2 tsp paprika or a pinch of nutmeg (optional, but adds depth)
- 2 cups sharp cheddar cheese, shredded
- Optional: a bit of grated parmesan or a sprinkle of crushed red pepper
Instructions
- Sauté the Base:
- In a large pot, melt the butter over medium heat.
- Add the onion and cook until soft, about 4–5 minutes.
- Stir in the garlic and cook for another 30 seconds.
- Make a Roux:
- Sprinkle in the flour and stir constantly for about 1–2 minutes to cook out the raw flour taste.
- Add Milk & Broth:
- Slowly whisk in the milk, then the broth. Keep whisking until it’s smooth and begins to thicken—about 4–6 minutes.
- Add the Veggies:
- Toss in the broccoli and carrots. Season with salt, pepper, and optional paprika or nutmeg.
- Simmer gently (don’t boil!) for about 15–20 minutes, until the broccoli is tender.
- Cheesy Finish:
- Reduce heat to low. Stir in the shredded cheddar a little at a time until melted and smooth.
- If you want it extra creamy, blend part (or all) of the soup with an immersion blender—or keep it chunky!
- Taste & Serve:
